I often bake muffins at least twice a week. The boys love to eat them,they can be frozen and there are always leftovers to snack on after school.Believe it or not,they prefer savory muffins over sweet muffins.With the exception of snickerdoodle muffins.But they inhale anything cinnamon related,so that is a given. But back to savory muffins. These cheese muffins are a staple in our kitchen. They are very easy to make,taste wonderful and can be eaten any time of day. You can use other types of cheese.Colby,jack,swiss. Although I have only used cheddar.That's what they like,that's what I make.Makes a great lunchbox treat as well!
Cheddar Muffins
- 1 cup milk
- 3 tablespoons unsalted utter, melted andcooled
- 1 large egg, lightly beaten
- 1 pinch cayenne pepper (optional)
- 1 3/4 cups all purpose flour
- 1 tablespoon baking powder
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 3/4 cup grated sharp cheddar cheese
- Preheat oven to 350 degrees F.
- In a large bowl, combine milk, melted butter, egg& cayenne.
- In a second bowl, sift together flour, baking powder, sugar& salt.
- Stir in cheese.
- Add flour mixture to milk mixture and stir batter until it is just combined.
- The batter should be lumpy.
- Spoon the batter into muffin tins , filling each about 2/3 full.
- Bake 20- 25 minutes.
- Cool on wire rack.
