Roasted Herb Potatoes


These potatoes are so full of flavor. I make them often in the warmer months to accompany grilled chicken and beef skewers. My kids request them , so I know they are tasty!I have used yukon gold potatoes as well as the red potatoes and both work well.


Roasted Herb Potatoes


3 lbs red potatoes , cut into bite sized pieces
6 tablespoons unsalted butter

3 tablespoons olive oil

3 garlic cloves, pressed
1/2 cup fresh Italian parsley, chopped
1 tablespoon fresh thyme, minced
1 1/2 tablespoons fresh rosemary, minced
1 1/2 teaspoons smoked paprika
cayenne, to taste
1/2 teaspoon salt
1/2 teaspoon black pepper



Preheat oven to 375.
In large pan, melt butter in oil over moderate heat.
Add garlic, parsley, thyme, rosemary, paprika and cayenne.
Add potatoes and toss well.
Roast, basting until potatoes are tender.
Season.
